Mostly eaten raw as a crunchy addition in salads, the radish is a root vegetable with wide-ranging applications. Served raw, it has a crisp bite and peppery flavor, but when baked, steamed, or cooked, the crisp root softens and mellows.
This week we're turning up the heat and oven-roasting!
Radishes are affordable and easy to find - typically priced under $1.50 per bunch. Adding radishes to your diet can make a great nutrient dense addition to a health-forward meal plan.
1 Radish Bunch
Oil (Avocado Oil is great for roasting at high temperatures)
Preheat oven to 400 degrees
Slice radish lengthwise into medallions
Season with salt, pepper, and cooking oil
Roast for 10 minutes
Served with mashed avocado for dipping
