About Radishes
Mostly eaten raw as a crunchy addition in salads, the radish is a root vegetable with wide-ranging applications. Served raw, it has a crisp bite and peppery flavor, but when baked, steamed, or cooked, the crisp root softens and mellows.
This week we're turning up the heat and oven-roasting!
The Economics
Radishes are affordable and easy to find - typically priced under $1.50 per bunch. Adding radishes to your diet can make a great nutrient-dense addition to a health-forward meal plan.
Ingredients
1 Radish Bunch
Oil (Avocado Oil is great for roasting at high temperatures)
Salt
Pepper
1/2 Avocado
Instructions
Preheat oven to 400 degrees
Slice radish lengthwise into medallions
Season with salt, pepper, and cooking oil
Roast for 10 minutes
Served with mashed avocado for dipping
